Ingredients (Makes 18 pieces, 85g each)

Preferment (Choose one option)

Option 1: Yeast-Based Preferment

  • 133g bread flour

  • 103g water

  • 5g yeast

  • 9g sugar

Option 2: Sourdough Preferment

  • 250 gr. active sourdough starter + 3 gr. of dry yeast

👉 Mix all ingredients for your chosen preferment. Let ferment at room temperature for 30–40 minutes (for yeast) or 4–6 hours (for sourdough) until bubbly and active.

Final Dough

  • 749g bread flour

  • 465g water

  • 9g salt

  • 30g extra virgin olive oil or butter

  • Entire preferment (yeast or sourdough)

Instructions

  • Knead for 3–4 minutes, then add salt and olive oil.

2️⃣ First Fermentation

  • Cover and let the dough rise for 1.5 hours (with yeast) or 4–5 hours (with sourdough), or until doubled in size.

3️⃣ Pre-Shape & Rest

  • Divide the dough into 85g pieces and shape them into balls.

  • Cover with plastic wrap or a damp cloth and let rest for 30–40 minutes.

4️⃣ Rolling & Second Rest

  • Roll out each dough ball into a flat disc (about 4–5mm thick).

  • Let rest for 20 minutes on the countertop to slightly dry out. (This helps create the signature puff!)
